Fruit and Nut Energy Bites

Ingredients:

1 cup rolled oats

1/2 cup nut butter (peanut butter, almond butter)

1/4 cup honey or maple syrup

1/4 cup chopped nuts (almonds, walnuts)

1/4 cup dried fruit (raisins, cranberries, chopped dates)

1 teaspoon vanilla extract

Shredded coconut or cocoa powder for coating (optional)

Equipment:

Mixing bowl

Spoon

Baking sheet or plate

Instructions:

In a mixing bowl, combine rolled oats, nut butter, honey/maple syrup, chopped nuts, dried fruit, and vanilla extract.

Stir until well combined.

Take small portions of the mixture and roll into balls.

Optional: Roll the balls in shredded coconut or cocoa powder for coating.

Place the balls on a baking sheet or plate and refrigerate for at least 30 minutes before serving.for our new recipe!
