Creamy Butternut Squash Mac and Cheese
Ingredients:
2 cups cooked macaroni pasta (use whole grain or gluten-free pasta for a healthier option)
2 cups butternut squash puree (you can buy it canned or make your own by boiling and blending butternut squash)
1 cup milk (use any milk of your choice, such as almond milk or skim milk)
1 cup grated cheese (sharp cheddar or a mix of your favorite cheeses)
2 tablespoons nutritional yeast (optional, for extra cheesiness)
1 teaspoon garlic powder
Salt and pepper to taste
Chopped parsley or green onions for garnish (optional)
Equipment:
Microwave-safe bowl
Blender or food processor
Mixing spoon
Instructions:
In a microwave-safe bowl, combine butternut squash puree, milk, grated cheese, nutritional yeast (if using), garlic powder, salt, and pepper.
Microwave the mixture in 30-second intervals, stirring in between, until the cheese is melted and the sauce is smooth. This might take around 2-3 minutes depending on your microwave.
Once the sauce is smooth, mix in the cooked macaroni pasta until it's evenly coated.
Microwave the pasta and sauce mixture for an additional 1-2 minutes to warm it up.
Stir well and adjust seasoning if needed.
Garnish with chopped parsley or green onions if desired.
Serve immediately.
